I managed to redeem another coupon from the Sugar app... this time it was just S$2 for a pineapple & jackfruit crumble from Bangkok Jam @ JEM, Singapore. The post title is due to the fact that both are tropical fruits which Southeast Asians consume, and both have spiky or spiny skins.
The presentation was lovely, and the ice cream made it a hearty dish, but I was generally disappointed with the quality of the dessert.
Before I go into the bad points, though, I wanted to highlight the reason why I'm featuring this - the jackfruit and pineapple combination was a really good idea. The jackfruit's pungency complemented the pineapple's tartness, sweetness and fragrance amazingly! Also, both had the fibrous texture to provide some consistency to the filling as a part of the crumble.
I couldn't taste the spices too well though... maybe it was due to having trouble zooming in on the fruit filling to begin with. Still, I think the typical pineapple compote spices should go well even with the jackfruit added to the mix, which would be cloves, and maybe cinnamon and star anise as in the garnish in the picture above.
The other good point was that the crumble was crunchy and almost crispy. But this is where the bad points start - I couldn't taste any butter in the crumble. It tasted like a crispy wheat cracker baked with only vegetable oil. That was really unfortunate because the creaminess and richness of a buttery pastry would have complemented the flavourful fruit filling very well, besides bringing out the wheat flavour in the pastry.
Furthermore, there was not enough of the fruit filling to taste it through the pastry. I had to specifically pick out a portion with just the fruit filling to taste what it was like.
So overall, it tasted kind of bland, with the fruity flavour being drowned out by the hollow pastry taste. Without the ice cream to smooth things over, it would have been an utter dry and crumbly disaster, like dusty rubble after a civil war.
In short - bad idea to buy this dish, but good idea to try a pineapple and jackfruit combination for fruit fillings, jams and other desserts!
