Lavender Earl Grey Cake - An Enigmatic Fruit Garden

Another cake from Flor Patisserie! Lavender earl grey cake this time. I absolutely loved the sound of the name, because both lavender and earl grey have such amazing herby fragrances. To have both of them in the same cake was a blissful thought to me... such an enigmatic and alluring, almost haunting combination.
The lavender earl grey cake looked like a fruit garden atop the snow-covered earth.
Firstly, I loved the colour combination of the two fruits and the green Flor tag... with the cream and brown cake, it's kinda like a fruit garden in winter, with the snow covering the brown earth.
Sweet lavender cream interlaced moist layers of earl grey tea sponge cake.
Next, I loved how they separated the lavender and earl grey flavours - the lavender was in the honey-infused cream, and the earl grey was in the cake. This allowed for both flavours to be appreciated together, yet distinctly.

The cream was light, delicately sweet and very milky, with a strong fragrance of lavender. You can even see little bits of lavender flowers in the cream, as in the first image - the two small dark lines on the top layer of cream, near the bottom left corner of the triangular slice.

The sponge cake was equally strongly flavoured with tea and bergamot, and was perfectly soft and moist. The overall combination of fragrances really reminded me of some elegant perfumes or scents... and amazing experience that was skilfully translated into a sweet, milky and comforting cake.

Finally, the fruits went very well with the cake and cream too! Especially when paired with the cake, it tasted something like a fruity bubble tea. And as mentioned before in my post on Saveur Art's desserts, the woody fragrance of lavender complemented the tart fruitiness of strawberries well, and likewise the zesty passion fruit, with the honey and cream adding a nice richness to support the fragrant flavours.

There were also these crushed pistachio bits lining the bottom of the cake, which looked like fallen yellow-green leaves. But other than providing a slight chewy experience, I couldn't taste them very distinctly, nor were they crunchy. I think pistachios are also just a signature feature of most of Flor's cakes... they were on the Blue Donut cake, and I also saw them on another cake that I'll feature here at a later date.
The bottom of the cake was lined with crushed pistachios, like fallen leaves.
It cost $7. Completely worth the price if you're looking for a good quality and unique dessert.
