Yeap, that's literally the name of this cake by Flor Patisserie, from their stall in the Takashimaya food basement, Singapore. Its main point of attraction for me was the colour... from butterfly pea flowers, apparently imported from Malacca and hand-extracted.
So although the official description says that the blue donut is apparently mousse, it came across to me as like a firm creamy jelly or pudding with actual butterfly pea flowers embedded inside, providing a bit of that vegetable or flower crunchy texture. The little amber arrow in the picture below indicates one such flower hanging out.
Then, there was a layer of vanilla mouse, followed by sponge cake at the bottom. The white dollop on top of the blue donut was yoghurt, and the green specks ground pistachios.
It was like a fragrant, milky and sweet mouthful of vanilla in three different textures - of the "donut", the vanilla mousse and the sponge cake. The creamy dollop of yoghurt on top and the honey in the blue mousse also gave it a very slight tart and sweet tinge of flavour, a bit like the hint of lemon you can taste in some otherwise plain cheesecakes.
The pistachios didn't really have a crunch or any discernible flavour though... probably because they were too few in number and too small. But I liked them for the splash of green they added to the blue! And they also matched the green Flor label.
Its execution was great. I thought the blue contributed to a certain "cool" and comforting effect to the experience, and overall it was a refreshing, bouncy and light snack of milky vanilla goodness! $7.40 for this... a little on the high side, but given its prime location and the incredible amount of artistic effort that went into this, I'd say it's perfectly reasonable.
