I absolutely loved Kewpie's original smoked mayonnaise and was practically addicted to using it for most anything savoury - egg mayonnaise, sandwiches, pasta, cheese and crackers and hard boiled eggs. So when I saw this new version that claimed "smoked flavour upped", I had to try it. It was launched in February last year.
Kewpie does not smoke the mayonnaise itself, but instead flavours its house-made vinegar with hickory chips to give it a robust smoky fragrance before using it in its normal mayonnaise recipe. In response to feedback asking for a stronger smoked flavour, Kewpie increased the amount of smoked vinegar used to enhance the smoky flavour.
I first tried this in egg mayonnaise, and indeed the smoked flavour was a lot stronger.
The natural burned coal aspect was pretty distinct, so I think Kewpie really delivered. It feels like more of a premium gourmet condiment as a result, something that could go on high-end restaurant meats such as grilled beef or chicken.If you aren't fond of the really smoky burned fragrance, you may not like this, so I would recommend looking for the older version (which only features a striped print on the plastic packaging, not the plate of veggies and eggs) or waiting to see if they re-launch the older version.
Nonetheless, I thought this enhanced version was good because I could afford to use LESS mayonnaise for the same amount of smokiness, which allowed me to add other condiments such as cheeses, creams or pesto while still maintaining a prominent smoked flavour, for a more complex experience. In this case, I added tomato basil pesto to the smoked mayonnaise egg.
It's definitely a condiment to keep around the home for moments when you need some creative inspiration for recipes. What would you try it with?
