I love Johan's range of mochis... they are very much like soft-baked cookies, but more stringy and chewy, and much less sweet! And recently, they featured what is probably my favourite of all the flavours I'd tried - blueberry white chocolate.
Firstly, more gushing about the texture. As you can see, it is baked quite well, so the outside is crunchy like a crunchy American soft-baked cookie. You can observe the yellowed and browned parts of the mochi in the image. Below, you can see the glistening and tranluscent nature of the mochi, which was chewy, bouncy and soft.
Secondly, the use of blueberries was ingenious... the berry fragrance permeated the entire mochi, and of course also gave it a nice purplish hue. Perhaps it's also the nature of the mochi starch that enables the flavour and colour to be so mixed in... I hardly see such penetration in wheat flour cookies.
Furthermore, the whiteness of the mochi is an especially nice effect when paired with the purplish parts... I suppose white goes with most colours, especially strong or unusual colours in food like purple. In this case, it looks like a fairytale combination. Conversely, normal cookies which are brown don't look particularly pretty with the dark purple of blueberries.
Finally, the white chocolate provided for a smooth and creamy finish to the fruitiness of the berries... and as you know, berries and cream are an awesome and friendly combination. They are especially friendly with the bouncy and smooth mochi.
